Easy gluten free & vegan treat to eat whilst watching Gilmore Girls on a cold autumn afternoon!

One of my favourite things to do in autumn, on a cold and chilly day, is have an afternoon of relaxing with my dog, binge watching one of my favourite shows, and eating a gluten free sweet treat.

Gilmore girls I think is one of those great shows that is perfect to watch during the autumn, at least until season 3 and then I won’t watch anymore because for me it ends perfectly there. But that debate is for another day!

A go-to recipe of mine to fulfil this autumnal fantasy and cosy afternoon is my Gluten Free, Vegan and Xanthan Gum Free Pumpkin Mug Cake. It is so yummy, quick and easy that it takes minutes to make, so you will be back under the blanket covers and reaching for the remote in no time!

Gluten Free & Vegan Pumpkin Mug Cake Perfect for Autumn

Equipment

  • 1 Microwavable Mug

Ingredients
  

  • 100 g Pumpkin Puree
  • 28 g Coconut Oil 2 tbsp
  • 55 g Brown Sugar
  • 40 ml Soya Milk
  • 1/8 tsp Baking Powder Very important to get baking powder rather than baking soda
  • 1/4 tsp Vanilla Extract
  • 50 g Gluten Free Rice Flour
  • 1/4 tsp Cinnamon

Instructions
 

  • Choose a fun microwavable mug that is on the larger side
  • Once you have selected your mug, add in the coconut oil and put it in the microwave for 30 seconds. This will ensure that you will have a silky-smooth batter that will be much easier to mix.
  • Next, add in the rest of the wet ingredients including the pumpkin puree, soya milk and vanilla extract. Give everything a nice mix to make sure the mixture is smooth and consistent.
  • Then, add the brown sugar, baking soda, gluten free rice flour and cinnamon to the mug. Same as before, give everything a nice mix to make sure the mixture is smooth and consistent.
  • Now that you have a thoroughly mixed batter time to put the mug into the microwave.
  • Microwave for 2-3 minutes (if you want a softer cake do it for 2 minutes but if you want a firmer cake then microwave for 3 minutes – up to you! πŸ˜‰)
  • Take out of the microwave, let the mug cool for a couple of seconds and then tuck in! 😊

Tips and Tricks

  • Toppings
    • I personally added gluten free & vegan chocolate on the top but whatever you want to add, or not add, is up to you. Go crazy with it! πŸ˜‰
  • I decided to use soya milk for my mug cake due to its natural sweetness. However, you can use whatever milk or milk alternative that you like.
  • If you want to, you can sieve the flour to have a smoother batter. Really, it is up to you. I personally didn’t sieve the flour for this bake, but it is up to you. πŸ™‚
  • I used brown sugar in my recipe due to its warmth and richness. However, if you prefer to use another sugar, Caster sugar, for example, can be a good substitute.:)
  • Just remember, that all of the measurements depend on how big your mug is. If you have a smaller mug, obviously you will have to use less, but if you have a larger mug you will need to use more. Just try to keep the ratios the same, as best as you can! πŸ™‚

The importance of baking powder vs baking soda when baking vegan treats – I promise you there is a difference!

Baking powder and baking soda are both used commonly in baking to cause cakes and other bakes to rise. The equation is simple, sodium bicarbonate mixed with acid causes a release of CO2 (carbon dioxide), which is what causes the cake to rise.

There is a major difference between using baking powder versus baking soda, especially when it comes to vegan baking. Baking soda is pure sodium bicarbonate and has no acid in it.

So, the baking soda (sodium bicarbonate) relies on the acid that is found in dairy products (like butter and milk etc.) for the cake to rise.

On the other hand, baking powder has both sodium bicarbonate and an acid in it, so you don’t need to add an acid yourself. That is why it is so important to use baking powder in vegan baking. Without the dairy product when using baking soda, the reaction cannot take place and no (or very limited) CO2 will be released. This means that the cake will either not rise in the first place or rise and very quickly sink. So, if you want that lovely risen cake as a vegan baker, make sure to use baking powder in the recipe! πŸ™‚

To Add a Pinch of Salt or to Not a Pinch of Salt, That is the Question….

I know that some people love that sweet and salty combination, and feel like the salt really brings out the flavour of the other ingredients. However, it is completely up to you. I know a lot of people also hate the sweet and salty flavour combo, and just prefer sweet to be sweet. Hence why it is completely optional. Though I personally don’t add a pinch of salt when making my Gluten Free, Vegan and Xanthan Gum Free Pumpkin Mug Cake Recipe.
