Easy To Make Fantastic Gluten Free Vegan Cottage Pie.

Intro
Honestly, weeknight cooking can be so hard. You are tired from a long day of work, and all you want it good grub, but then you have to go into the kitchen and peel and chop an onion. Too much effort when you are too drained and tired. However, what may keep you going is instead of having to cook every single night, over the weekend why not try batch meal prepping? This way you can just veg on the sofa, eat and decompress after a long hard day of work!
There are a lot of great recipes on glutenfreevips.com that are perfect for meal prepping, including this vegan cottage pie recipe. I love cottage pie and it is one of those fantastic recipes that are great for meal prepping as you make so many portions in a relatively short period of time!

Easy To Make Fantastic Gluten Free Vegan Cottage Pie.
Ingredients
Mash
- 2.5 kg Potatoes
- 2 tbsp Dried Rosemary
Veggie Mixture
- 1 large Swede
- 200 g Baby Corn
- 200 g Snap Peas
- 4 Carrots
- 3 Red Peppers
- 1 Large White Onion
- 3 tbsp Tomato Puree
- 400 ml Gluten Free Vegan Stock 4 tbsp of Gluten Free Vegan Stock Granules for 400ml of boiling water
- 2 tbsp Dried Rosemary
- 2 tbsp Dried Sage
- 2 tbsp Dried Parsley
- 1 tbsp Olive Oil
Instructions
- Preheat the oven at 220oC (200oC fan)
- Wash and peel potatoes and let them boil on a medium to high heat for 40 minutes whilst you prepare the rest of the cottage pie.
- Wash, peel and chop the swede into chunks and then let it boil on a low to medium heat for the 40 minutes.
- Wash, peel and chop the white onion, carrots, red peppers, baby corn and snap peas. Add olive oil to a separate boiling pot and let the veggies simmer until golden brown.
- Next, add the tomato puree, rosemary, sage and parsley to the veggies.
- Add the 400ml Vegan Stock to the vegan veggie mixture.
- Now it is time for assembly, place the vegan veggie mixture into an oven dish and then on top add the mash potatoes.
- Place the now assembled cottage pie into the oven for 40-60 minutes
- Enjoy!

Tips and Tricks
For those that miss a creamy mash in a cottage pie
I really like this cottage pie recipe as even though it lacks milk because the potatoes are boiled on a relatively high heat for so long they are not lumpy at all. However, if you are craving creamy potatoes, make sure to add a suitable vegan alternative. Soya milk is not a bad choice, and I have used it before and the dish has tasted just as delicious, but it will result in a bit of a sweeter taste. Additionally, nut milks like almond milk have their own pros and cons, as once again they can be a bit sweet, but bring in a lovely almond flavour to the dish. Really the choice is your own with what works with your flavour profile. I think an oat milk would be a good milk alternative for this dish, as it will not be overpowering in flavour and it will provide the creaminess that some may think the dish lacks in its current form.
Vegan cheese can be a good alternative if you are missing the cheesy mash
Vegan cheese was not used in this cottage pie as the dish is adequately seasoned with vegan stock, rosemary, sage and parsley. However, for those vegan cheese lovers, just make sure to add approximately 150g of vegan cheese to the mash if you would like to add it. Truthfully, I have never had vegan cheese before and so I didn’t feel confident enough to add it to this recipe, additionally I know there are a lot of vegan cheese haters out there so I thought it would be better to omit it from the recipe entirely. Please let me know how the recipe tastes with the vegan cheese if you decide to use it in this recipe – I would be very curious to hear the results.

To Salt Or Not To Salt…
When it comes to salting the vegan cottage pie, I personally believe a little will go along way. Whilst I think it is nice to add that little sprinkle, I wouldn’t add anymore than that. I don’t personally believe it is necessary to use salt in this dish as the vegan stock is being used, however to each to their own. Happy eating!😉❤️
