With less than a month to go for Valentine’s Day, this week I have decided to share my Happy Valentine’s Day Gluten Free Heart-Shaped Sugar Cookies Recipe.

Arguably, nothing could show your love for the Gluten Free VIPs in your life more clearly than heart-shaped sugar cookies. These sugar cookies are perfect to make for your Valentine to show you care. 🥰❤️😍

This recipe also includes my recipe for red cherry icing, so you don’t need to worry about trying to find a gluten free red dye in time for the big day.

Valentine's Cookies

Happy Valentine’s Day Gluten Free Heart-Shaped Sugar Cookies Recipe

Prep Time 4 hours 40 minutes

Ingredients
  

For the Cookie Dough

  • ½ tsp. of baking soda
  • 120 g of unsalted butter
  • 1 egg
  • 350 g of gluten free all-purpose flour
  • 1 tsp of vanilla extract optional
  • 140 g of white sugar
  • A pinch of salt optional

For the Decorations

  • 70 g of a chocolate bar of your choice
  • 30 ml of cherry concentrate this should be tart
  • 75 g of icing sugar
  • 10 ml of water

Instructions
 

Stage 1 – Making the Sugar Cookie Dough

  • Beat the butter and the sugar in a mixing bowl thoroughly.
  • Add the egg and vanilla extract (optional) into the mixing bowl and mix thoroughly.
  • Add the remaining dry ingredients (baking soda and flour) into mixing bowl and ensure the mixture is evenly distributed.
  • For the best results, refrigerate the dough for at least a couple of hours, preferably overnight.

Stage 2 – Baking the Sugar Cookies

  • Preheat the oven to 180°C (160°C fan/ gas 4).
  • Sprinkle your surface with flour and rolling pin with about 10g of flour and roll out the dough to about ½ cm thickness.
  • Cut out shapes in the dough using your heart-shaped cookie cutter.
  • Place the shaped cookies onto your baking trays keeping them at least 2 ½ cm apart.
  • Bake in the oven for about 20 minutes.
  • Check to see if the cookies are fully cooked by placing a wooden pick/ cake tester into the middle of each. If they come out clean, then you are good to go onto the next step!
  • Let the cookies cool in the baking tray for about 5 minutes and then transfer them to wire rack and leave them until they are fully cooled.

Stage 3 – Decorating the Sugar Cookies

  • Melt a bar of chocolate of your choice in a microwave safe bowl.
  • Cover half of the batch of cookies with the melted chocolate.
  • Mix the cherry concentrate, icing sugar and water in a bowl to create the cherry icing.
  • Cover the other half of the batch of cookies with the cherry icing.
  • Let the sugar cookies cool at room temperature for about 15 minutes.
  • Next, enjoy!

Tips and Tricks

  • Take the butter out of the fridge about 15 minutes before you use it. This will make the mixing process easier as the butter will be softer.
  • You can sieve the gluten free flour to make the cookie dough smoother.
  • If you don’t like decorated cookies and prefer them plain, then by all means skip Stage 3.
  • Also, if you would like to make all the cookies have consistent decoration, you can do this. Just double the ingredients for the cherry icing to make it enough for all 12 cookies. Alternatively, double the amount of chocolate I have listed if you want all of the cookies to be covered in chocolate. ❤️
  • In order to prevent the uncooked cookie dough from getting stuck to your baking trays, cover your baking trays in parchment paper/ tin foil.
  • Remember this is a relatively quick bake, so make sure to keep an eye on the time to prevent your cookies from burning!!
  • As I say a lot, adding sprinkles like gluten free hundreds and thousands to your cookies is completely up to you. Have fun with the bake!!! 😊

Why Using Tart Cherry Concentrate Juice is So Important

I like to use a tart cherry concentrate when making my cherry icing because it makes sure that the icing is not overly sweet. This way the icing is sweet, but not overpowering!!!

To Add Vanilla Extract or to Not Add Vanilla Extract, That is the Question….

As I am a big vanilla fan, I use vanilla extract when making up the cookie dough for this recipe. If you are not a fan or don’t have it in the cupboard, don’t fret. I know from personal experience that the cookies still taste delicious without the vanilla extract!!! 😂😊

Whether to Add A Pinch of Salt

Whilst some people like to add a pinch of salt to their favourite sweet baked goods, I personally don’t. However, if you are in the camp that does like to add a pinch of salt, then by all means do!!!

Storage

  • The sugar cookies can be stored for 2 days when left out at room temperature and stored in an air-tight container. If you store them in a fridge, they can potentially last up to a week.
  • Additionally, this is just guidance. So, if it looks a bit dodgy, you don’t like the look of it or if it has been out for a while, then unfortunately, I think that is one for the bin. When it comes to cooking and baking a bit of common sense will go a long way. It is always better to be safe than sorry. Additionally, when storing always use an air-tight container, otherwise these times do not apply.
