How to Make the Best Gluten Free Dairy Free Yorkshire Puddings.

Yorkshire Puddings are the cherry on top equivalent for a Sunday roast. They just don’t feel complete without the crispy, crunchy, golden brown Yorkshire puddings on top to help soak up the extra gravy. They are just perfect. However, they can be hard to make for those that aren’t gluten free, let alone for those on a gluten free diet.

However, honestly, with this recipe you have no clue that the Yorkshire puddings are actually gluten free. I have been told multiple times that they are better than some pub Sunday roasts Yorkshire puddings. I hope that you enjoy this recipe. How to Make the Best Gluten Free Dairy Free Yorkshire Puddings

Gluten Free VIPs
Gluten‑free, dairy‑free Yorkshire puddings that rise tall, crisp, and golden without sacrificing the classic texture. Made with simple ingredients and hot oil for that essential steam lift, they’re perfect for Sunday roasts and allergy‑friendly tables alike. Light, airy, and reliably delicious for everyone around the table.

Ingredients
  

  • 300 ml Almond Milk or any other dairy free milk of your choosing
  • 100 g Gluten Free Flour
  • 100 g Gluten Free Cornflour
  • 6 Large Eggs
  • 1/2 tsp Salt
  • 12 x 2 tsp High Smoke Point Oil e.g. sunflower oil/ rapeseed oil/ vegetable oil etc.

Instructions
 

  • Preheat oven to 220oC
  • After the oven is preheated, put 2 tsp of oil into each of the 12 wells of the cupcake tray and then place it into the oven to get piping hot for 10-15 minutes
  • Whilst the oil is being heated, whisk together the flour, cornflour, eggs, almond milk, and salt in a jug
  • Carefully take the piping hot cupcake tray out of the oven and pour the batter until 2/3 full into each of the wells (there should be some bubbles and sizzling)
  • Cook for 25 minutes, or until golden brown. Enjoy!

Tips and Tricks

Make sure to use 6 large eggs!

The eggs are one of the key components that help the Yorkshire puddings rise, so if you don’t have enough eggs make sure to adjust the cornflour, flour and milk to compensate. Additionally, if you only have medium eggs, remember that 1 large egg is approximately 2 medium eggs, so in this recipe you would need 12 medium eggs instead of 6 large eggs.

When cooking the Yorkshire puddings, only use oven mode and not fan!

If you want that nice uniform rise to all of the Yorkshire puddings make sure to use oven mode instead of fan. I am not exactly sure why, but every time I have used fan mode on my oven, instead of oven mode it has prevented that nice and even rise for the Yorkshires puddings.

When whisking together the Yorkshire pudding mixture, mix the dry ingredients first followed by the wet ingredients.

To ensure an even consistency for the Yorkshire pudding mixture each time, make sure to whisk together the cornflour and flour thoroughly, then make a divot in the flour mixture and add in one egg at a time. Finally, add in the milk 50ml at a time to ensure a nice and thorough whisking so that the mixture is aerated with no lumpy bits!

Whatever you do, don’t open the oven whilst they are cooking!

Yorkshire puddings depend on steam to rise. The steam is generated from the Yorkshire pudding mixture being poured into the hot oil and then placed into the hot oven. If you open the door to the oven too soon, this will cause the temperature of the oven to drop, the steam to escape, and you are left with deflated and unhappy Yorkshires. Additionally, unhappy and deflated people as well to contend with that wanted a lovely crunchy Yorkie. Be patient – don’t open the oven door!

Making the Yorkshire puddings nice and crunchy!

If you want nice and crunchy Yorkshire puddings, you can cook them for longer than 25 minutes. But remember to keep an eye on them so they don’t overcook! I like to cook them for at least 40 minutes to have a crunchy outer shell and to prevent a soggy bottom, because nobody likes a soggy bottom!

For an easy life – make the batter the night before for the best results, and it is much much quicker for you! (this is if you want them fresh out of the oven when serving)

For an even easier life – make a big batch of Yorkies and then freeze them! for up to 1 month so that you can use them for whenever you need them without having to make fresh yorkies each time

The Yorkshire puddings are good in the freezer for up to a month, and when you fancy eating one just pop them in the oven for 5-10 minutes at 220oC. They can be reheated directly from frozen, no need to leave them out before!

High smoke point oil – it is a must!

As soon as you see the word extra, run for the hills with Yorkshire pudding recipes! Anything extra means it will have a low smoke point. You want high smoke point oils like rapeseed oil, sunflower oil, and vegetable oil (to name a few). This is because at high temperatures, they won’t break down (e.g. burn and smoke etc.). As Yorkshire puddings need a high temperature and the oil has to be cooked by itself for some time, make sure to get an oil that can handle the heat!
