10 Gluten Free Desserts To Make Your Week Better.

Intro

We all have those weeks where nothing feels like it is going right. It is fine to feel stressed, but also remember to find the joy in the small things! Just know that just like you have done so before, you can conquer this challenge too. If you are having a hard week as it is, then I recommend the perfect TLC as being desserts. I have complied some of my favourite dessert recipes – hopefully this helps cheer up your week! I truly wish you have a better next week, bad weeks come and go but good dessert recipes are always there to pick you up when you are down!

Brownies are a staple in the desserts for a reason. Often cited as being the number one dessert for many people, this recipe will not disappoint. What is particularly special about the recipe above it that it uses macadamia nuts which naturally help to balance the sweetness of the chocolate. The brownie recipe is gluten-free and vegan, but obviously not nut-free. If you need to make it nut-free then you can always use other alternatives to the nut-based ingredients use in the recipe e.g. you could always use chocolate chips instead of the macadamia nuts.

Scones, an absolute classic. They are great for afternoon tea, if you are feeling a bit fancy, or just for a normal pick me up treat at the end of the day (or in the middle of the day). What I love about scones is that they are naturally not that sweet, so depending on what you feel like that day (whether you are in an ultra sugary mood or more in the mood for a lightly sweetened dessert) you can customise based on your own sugar tolerance.

I love a crumble as I can trick myself into believing that I am being really healthy, even though it is a dessert. As it contains cherries it counts as one of my five a day surely (I just won’t count all of the sugar eaten with the cherries). But in all seriousness, it is one of the absolute favourite desserts of many for a reason, it is so warming and comforting and delicious. I am making myself hungry now just thinking about it!

Crinkle cookies have to be one of the best inventions in cookies yet, you are purposely allowed to make them not look that great because the sugar icing on top will save the day (very forgiving for new and old bakers a like). But, more than that, they are just so delicious and very moreish.

Carrot cake reminds me of autumn time, the leaves are falling and there is a cold breeze starting to pick up in the air, it is just a nice time of year where things are starting to calm down a bit (before everything goes into a frenzy again due to Christmas, and Thanksgiving for my American friends). There is nothing nicer than sitting down and eating a carrot cake cupcake with vanilla frosting to watch the world go by and calm down for a bit.

7. The Best Ever Gluten-Free, Vegan, Easy Strawberry Parfait Recipe

Parfaits are very weird to me because they definitely can be a dessert in their own right, but they can also be some people’s breakfast. Whether you eat them for breakfast or for dessert, the fresh fruit and vanilla yoghurt mixture is just heaven.

While I have called them Valentine’s day cookies, you don’t need to just exclusively have them on valentine’s day. I love a sugar cookie, sometimes the basics frankly are the best. The recipe above uses a cherry based icing which is just to die for.

9. The Best Gluten Free Blueberry Crumble Of Your Life

Crumbles are amazingly great as you can put whatever fruit you want in them. The reason why I love the blueberry, and cherry crumble, in particular is because you don’t have to prepare the blueberries and cherries as intensively as you would for an apple crumble. But don’t get me wrong, apple crumbles are amazing and are worth the effort.

10. How To Make A Gluten-Free Vegan Healthy Frozen Smoothie Bowl

This is my take on a frozen smoothie bowl recipe, I would only recommend having this in the summer however as it might be a bit cold. I tried to make this dessert to almost be like an upside down cheesecake, but instead of the cheesecake batter it is a frozen smoothie.
