Gluten Free Vegan Roasted Carrots That You Must Make.
Hello everyone! I hope you are having a wonderful day!
I am absolutely a person that loves vegetables and what makes them even better is when they are roasted! This week’s recipe is a side dish that can be paired with any meal, it goes fantastically with a roast, however if you are just in the mood for roasted vegetables/ carrots, which I frequently am, this recipe can just be a stand alone.
In the future I am planning on making and posting lots of side dish recipes, especially roast side dish recipes that are perfect for an Easter Sunday Roast or a Christmas Day Roast so be sure to keep a look out!
Just to let you know, this recipe is gluten free, vegan and vegetarian. Whilst this recipe says that it serves 8 (as a side dish, assuming that other parts to the meal will be present), it can always be doubled or halved depending on your needs!

Gluten Free Vegan Roasted Carrots That You Must Make
Ingredients
- 8 Carrots
- 2 tbsp Olive Oil
- 1 tbsp Rosemary
- 1 tsp Black Pepper
- 1 tsp Salt
Instructions
- Preheat the oven to 200oC (fan)
- Wash and peel the carrots
- Place the carrots in the oven proof dish
- Add the olive oil to the carrots and give them a gentle stir so they are all covered with oil
- Next add the rosemary, salt and black pepper and once again gently stir them in the ovenproof dish so that all the carrots are evenly covered
- Cook/ roast the carrots for 45 minutes to 1 hour
- Take out of the oven and enjoy!

Tips and Tricks
Surface area, surface area, surface area!
- The key to perfectly luxurious roasted carrots that are soft on the inside but are lovely and caramelised and slightly crispy on the outside is making sure that every single carrot comes into contact with the surface of the oven dish!
- I appreciate how annoying it is. There is a lot of room left in the oven dish and all you want to want to do is stack it sky high with carrots and be done with it. But if you can, resist the urge and the carrots will be so much nicer because of it!
- The carrots need that that contact with the bottom of the oven dish in order to become the crispiest they can be, however, whilst I am against stacking, make sure that everything is compact and squashed so that there is absolutely no space on the bottom of the oven dish that doesn’t have a carrot on it
Chopping up the carrots into slender sticks
- I personally decided to cut the carrots into slender sticks for 3 reasons:
- (1) Aesthetically I think that they look nicer that way
- (2) Reduced cooking time as they are a smaller volume and so they will crisp up quicker as well
- (3) To maximise crispiness and juiciness of the carrots

Seasoning
- I went with the classic roasted carrots seasoning of salt, pepper, rosemary and olive oil mix it all together
- However like I always say, if that is not to your cup of tea then no worries, the kitchen is always a fun place to experiment. Make this dish your own!
Even coating on both sides
- Half way through the bake, make sure to flip the carrots over so every carrot in the ovenproof dish has a nice and even coating of both the olive oil and the rosemary! This helps to enhance the flavour, but completely up to you, I have been there many a time where I just can’t be bothered to flip them so don’t worry about it!😊

To Salt Or Not To Salt…
When it comes to salting the gluten free vegan roasted carrots, I personally believe it can be a fantastic bit of flavour that can really add to the whole dish. However, I wouldn’t put too much salt as that can create too salty of a dish and diminish the lovely and sweet flavour of the carrots. So like always to each to their own! Remember to always salt on the side of caution, as you can always add more salt but once you have added the salt it can’t be taken away! Happy Cooking!❤️❤️❤️
