How To Make The Fluffiest Gluten Free Scones.

Intro
Scones are quite the controversial topic. From the war over pronunciation, and then the battle over the ordering of jam and clotted cream (Devon vs Cornwall). These fluffy little cakes cause quite a stir. And yet, despite the trouble they cause, they are worth it in the end because they are just so yummy!
A good thing about scones is that you can make them unsweetened, sweet, or savoury. For this recipe it is a lightly sweetened version of scones, perfect for pairing with jam, clotted cream, and butter. But, you don’t have to go the traditional route, I paired my scones with pistachio butter (a real favourite of mine at the moment). I think what I am trying to say is that you can customise them and pair them with whatever you like, to perfectly suit your taste. They are very versatile!
In the future, I may publish a savoury scone recipe, I think it can be fun to come up with different combinations. So be on the look out for that in the future!

How To Make the Fluffiest Gluten Free Scones
Ingredients
- 200 g Self-Raising Gluten Free Flour
- 50 g Cornflour cornflour is naturally gluten free, but I always like to buy one that specifically says gluten free on it, just in case😊
- 50 g Butter
- 1 Egg
- 70 ml Milk I used almond milk
- 50 g Caster Sugar
Instructions
- Preheat the oven to 200°C fan (220℃ oven).
- Mix the dry ingredients (self-raising flour, cornflour, and sugar) together in the mixing bowl.
- Add the butter to the dry ingredients and rub it in until the mixture resembles breadcrumbs. Mix in the egg until just combined. Then slowly pour in the milk, a little at a time, mixing gently to bring the dough together while avoiding a sticky texture.
- Dust a clean surface with flour. Using a rolling pin, roll the dough out until it is a thickness of approximately 3cm.
- Use a large cookie cutter (I used a heart-shaped one) to press into the dough and cut out the individual soon to be scones. Transfer the dough to a parchment-paper lined baking tray.
- Before popping the scones into the oven, give them a light egg wash. Then cook for 15 minutes. Enjoy!

Tips and Tricks
For a beautiful flaky texture make sure to use cold butter. I know it is tempting to use room temperature butter as it is so much easier to mix on the old arms, but you have to push through it for the best scone outcome possible! Make sure to cut the butter into small cubs to make it easier, or to make it even easier use an electric whisk or kitchen aid.
Traditionally, you add clotted cream, jam, and butter to sweet scones (as toppings). However, I like to add pistachio butter to my scones, but that is just my personal preference! You can also add dried fruit to the mixture to help provide more moistness (things like dried cherries, sultanas, raisins etc.)
The Cornish way of scones is all about the toppings, not even the scones recipe itself (but let’s be honest, I bet every Cornish Nana has got their own scone recipe!). So, in Cornwall they put the jam on first to the scone and then add the clotted cream.
The Devon way of scones is the exact opposite way of the Cornish way of scones – hence the long debate about which is the correct way to order the toppings. In Devon, they add the clotted cream, then the jam on top. So now you know the difference between the Devon and Cornish way of scones layering, which side are you on?
If you’d like to reheat the scones, warm them for about 30 seconds in the microwave or for around 2 minutes in the (already pre-heated) oven.
