It is that time of the year when I am constantly cold and shivering, and when I am freezing I always crave warm meals that are homey. So, I thought I would share with you my easy, forget-about-it dish that is perfect for the end of a cold long day. Whilst the recipe length may scare you away, the prep time is only 10-15 minutes and traybake just spends the rest of the time in the oven without you having to think about it! A perfect lazy recipe, fit for the busy weeknight! This traybake meal is perfect for large family meals or for bulk meal prepping.

Easy Gluten Free Sausage Traybake Recipe As A Weeknight Dinner

Gluten Free VIPs
Prep Time 10 minutes
Cook Time 1 hour 15 minutes

Ingredients
  

  • 3 Large Potatoes
  • 1 Red Onion
  • 3 Bell Peppers
  • 8 Gluten Free Sausages e.g. 1 packet of gluten free sausages
  • 2 tbsp Rosemary
  • 1 tbsp Thyme
  • 1 tbsp Black Pepper
  • 2 tsp Salt (optional)
  • 3 tbsp Olive Oil

Instructions
 

  • Firstly, peel the potatoes and once peeled, cut them into large chunks.
  • Then put the potatoes on a parboil for 10-15 minutes at medium-to-high heat. Add 1 tbsp of rosemary and 1 tsp of salt to the boiling water (optional).
  • Whilst, the potatoes are parboiling, cut up the peppers and red onions into large chunks.
  • In a large oven dish, add in the parboiled potatoes, chunks of red onion, red peppers
  • Drizzle 3 tbsp of olive oil on top of the vegetables in the oven dish and the proceed to sprinkle evenly across the vegetables 1tbsp of rosemary, 1 tbsp of black pepper, 1 tbsp of thyme, and 1 tsp of salt (optional).
  • With a spoon carefully toss around the vegetables so they are all thoroughly coated in the olive oil and spices.
  • Next, add in the gluten free sausages where you can fit them on the oven dish
  • Place a bit of tinfoil over the oven dish and bake at 200oC for 30 minutes
  • Then take the oven dish out of the oven, with a spoon turn over the sausages and mix around the vegetables a bit so they can have a nice thorough coating of all of the sausage fat.
  • Place the oven dish back into the oven (without the tinfoil) for another 15-30 minutes or whenever the sausages start to look golden brown
  • Before digging into this fantastic treat, make sure to look at the inside of the sausages, if it is still pink then it needs more time in the oven.
  • Now it is all cooked, enjoy this scrumptious dinner!

Tips and tricks

  • For this recipe I made a medium-sized portion to fill my medium sized dish but feel free to double the ingredients to either serve more people or to use as batch/bulk cooking for meal prep
  • One of the absolutely necessary parts of this dish is to turn over and mix the vegetables when you take them out of the oven to remove the tinfoil. Before you place the traybake back in the oven for its last cook to give it a lovely crispy texture and a nice roasted flavour, it is imperative to toss and coat all the vegetables and sausages in all of the juices that have drained to the bottom of the tray. This will not only help to give the dish a better flavour, but also this will prevent the vegetables and the sausages from becoming too dry!
  • In this dish I decided to use the vegetables that I though would not only compliment the traybake, but also my own tastebuds, so feel free to substitute any vegetables in or out that you fancy to really make this dish your own. Some other vegetable suggestions that I feel would pair nicely with this dish include: Carrots, Parsnips and Sweet Potatoes (but the list is endless!😊)
  • Additionally, the same idea with substitution also applies to the spices. As this traybake involves roasted vegetables I used the classic roast spices including Rosemary, Black Pepper, Thyme and Salt. However, if any of these are not your cup of tea or you would prefer to get creative and try a new spice combination – go for it! 😊

To Salt Or Not To Salt…

When it comes to salting the traybake, I put it down as optional because I personally do not think it needs it. The sausages already give the dish a lovely a salty taste, however, if you feel that it requires a pinch of salt I recommend no more than 1 teaspoon as stated in my recipe.

Storage

  • Sausage Traybake can be left in the fridge for up to 3-5 days and frozen for up to 1 month if properly stored (remember when defrosting, defrost the day before).
    • To properly freeze and store in the fridge, the sausage traybake must be put in an air-tight container.
  • Additionally, this is just guidance. So, if it looks a bit dodgy, you don’t like the look of it or if it has been out for a while, then unfortunately, I think that is one for the bin. When it comes to cooking and baking a bit of common sense will go a long way, it is always better to be safe than sorry. Additionally, when storing always use an air-tight container otherwise these times do not apply.
