Gluten Free Flapjacks That Make For A Luxurious Breakfast.

This week I am sharing my Gluten Free Flapjacks That Make For A Luxurious Breakfast recipe. Flapjacks are baked oat bars, which according to a bit of Google searching trace back to medieval England. They are popular breakfast option in the UK (where I’m based), though they can also be eaten as a snack or a dessert.

Flapjacks are usually cut into either squares or rectangular bars after they have been baked, which makes them ideal for batch cooking. I like to make a batch knowing that it will cover me for a week worth of breakfasts. It is common to add fruit to the flapjacks, especially cherries, though there are many creative combos out there! The high oat content means they are packed with fibre and flapjacks that contain cherries (like my recipe does) of course provide a lot of nutrients along with Vitamin C and antioxidants.

So, all in all, flapjacks are one of my favourite breakfasts and are my go-to to have during a busy week!

How I portion up my flapjacks

My recipe is gluten free, vegetarian and makes 15 flapjacks.

As you have seen in the title of this recipe, I like to make a batch of these flapjacks to cover a week worth of breakfasts. I tend to have about 2 each day as a breakfast (I tend to eat 3 if I know that I will be having a late lunch). This system works well for me, but feel free to eat the flapjacks whenever you like! My recipe is designed to make 15 flapjacks.😊😊😊

Cherry flapjacks

Gluten Free Flapjacks That Make For A Luxurious Breakfast

  • 1 Baking Paper
  • 1 Cooling Rack
  • 1 Food Processor optional
  • 1 Mixing Bowl
  • Oven Dish
  • 1 Pan
  • 1 Small Bowl

Ingredients
  

  • 75 g of butter
  • 335 g of gluten free oats
  • 200 g of golden syrup
  • 240 g of pitted frozen cherries
  • 1 teaspoon of vanilla extract optional

Instructions
 

  • Preheat the oven to 170°C (150°C fan/ gas 3).
  • Melt the butter in a pan then pour the melted butter in a small bowl.
  • Mix together the melted butter, the golden syrup and the vanilla extract (optional) thoroughly in a small bowl.
  • Place the oats and cherries in the mixing bowl.
  • Add the butter, golden syrup and vanilla extract (optional) mixture in gradual increments into the mixing bowl. Mix thoroughly (if you can, use a food processor).
  • Transfer the contents of the mixing bowl into an oven dish lined with baking paper. Try to spread the mixture as evenly as you throughout the dish.
  • Bake in the oven for about 25 minutes.
  • Check to see if the flapjack is fully cooked by placing a wooden pick/ cake tester into the middle of each. If the wooden pick comes out clean, then you are good to go onto the next step!
  • Let the flapjack cool in the baking tray for about 5 minutes and then transfer the flapjack to a cooling rack. Leave the flapjack until it is fully cooled.
  • Remove the flapjack from the oven dish. Cut the flapjack into 15 bars.

Tips and Tricks

  • I like to use pitted frozen cherries when I bake to save time. However, if you would prefer to pit your own cherries and use fresh cherries, then by all means do so.
  • If you would like to use more cherries (or alternatively not use any cherries at all!) then include/exclude according to your preference. Cherries are one of my favourite fruits, but if you are not fond of them then you can always substitute the cherries for another fruit or just make plain flapjacks.
  • If you want to replace the golden syrup with another sweetener like honey or brown sugar, then feel free to.
  • I am sure that adding topping like nuts or grated chocolate would complement the flapjacks well. As I like to make a batch of these flapjacks as a breakfast, I personally eat my flapjacks plain!
  • Try adding a sauce to the flapjacks like chocolate sauce, if that is your thing!

To Add Vanilla Extract or to Not Add Vanilla Extract, That is the Question….

I personally like to add vanilla extract to my flapjacks. If you have read a few of my recipes before, you may have noticed that I love to include vanilla extract to many of my sweet recipes. My flapjacks recipe is no exception! However, if you don’t have any vanilla extract in the cupboard or are simply not interested in adding it, then don’t worry about including it.

Storage

  • These flapjacks can be stored for about 7 days when stored in an air-tight container and kept in the fridge.
  • Additionally, this is just guidance. So, if it looks a bit dodgy, you don’t like the look of it or if it has been out for a while, then unfortunately, I think that is one for the bin. When it comes to cooking and baking a bit of common sense will go a long way. It is always better to be safe than sorry. Additionally, when storing always use an air-tight container, otherwise these times do not apply.
