Preheat the oven to 170°C (150°C fan/ gas 3).
Melt the butter in a pan then pour the melted butter in a small bowl.
Mix together the melted butter, the golden syrup and the vanilla extract (optional) thoroughly in a small bowl.
Place the oats and cherries in the mixing bowl.
Add the butter, golden syrup and vanilla extract (optional) mixture in gradual increments into the mixing bowl. Mix thoroughly (if you can, use a food processor).
Transfer the contents of the mixing bowl into an oven dish lined with baking paper. Try to spread the mixture as evenly as you throughout the dish.
Bake in the oven for about 25 minutes.
Check to see if the flapjack is fully cooked by placing a wooden pick/ cake tester into the middle of each. If the wooden pick comes out clean, then you are good to go onto the next step!
Let the flapjack cool in the baking tray for about 5 minutes and then transfer the flapjack to a cooling rack. Leave the flapjack until it is fully cooled.
Remove the flapjack from the oven dish. Cut the flapjack into 15 bars.
