Gluten Free Goat’s Cheese Veggie Bake Just For Two.

On this week’s gluten free I decided to post about an old recipe that I made a couple of years ago. I won’t lie to you, it probably isn’t the most original but it is quick, easy, delicious, gluten free and vegetarian. In essence, it is just cheesy veg, like I said not the most original thing in the world. But it is so nice to have something quick, easy, delicious and convenient to just boil and pop in the oven and forget about it. It is a perfect weeknight dinner for when you want to have something nice but without spending a century on the prep work.

In the title it says just for two as this recipe was originally intended as a small recipe, maybe for just yourself or two people that is quick and easy, as sometimes I just don’t want a fridge full of leftovers. But, if there are more people you need to feed, or you do need a fridge full of leftovers, this recipe can be happily doubled or tripled to fit your needs! Gluten Free Goat’s Cheese Veggie Bake Just For Two

Gluten Free VIPs
Prep Time 10 minutes
Cook Time 40 minutes
Total Time 50 minutes
Course Dinner, Lunch
Servings 2

Ingredients
  

  • 170 g Goat’s cheese
  • 100 g Baby Carrots
  • 100 g Snap peas
  • 100 g Broccoli or you can use broccolini
  • 100 g Baby Corn
  • 1 tablespoon Gluten Free Vegetable Stock (optional)

Instructions
 

  • Preheat the oven at 200oC fan
  • Wash the vegetables and peel the carrots
  • Add 1 tablespoon of gluten free stock and the washed and peeled vegetables to a pot of boiling water and boil the vegetables for 20-25 minutes on a medium heat
  • Cut the goat’s cheese into small chunks whilst the vegetables are boiling
  • Then drain the vegetables and add them to an ovenproof dish and place the goat’s cheese on top of the vegetables
  • Place the veggie bake in the oven for 20-30 minutes or until the goat’s cheese is golden brown
  • Enjoy!

Tips and Tricks

Rather than using baby carrots make your life simpler, but less aesthetic, by just using plain old regular carrots and cutting them up

I do love the baby carrots because I think they create such a cute aesthetic, but by God were they so hard to peel. They were so small and I was really scared of cutting myself, via peeling, because of how tiny the baby carrots were. So, in this sad occasion I really think practicality beats out the aesthetic. Also I just don’t think anyone will care in the long run as long as they have nice piping hot delicious food in front of them.

Using Feta Cheese as an alternative to Goat’s Cheese

Originally, I used Feta cheese to make this recipe and it was a wonderful dish to make. I used Goat’s cheese in this recipe, not even because I thought it was particularly better, but instead I used Goat’s cheese for this recipe as that is what I had in the fridge! However, if you are more of a feta cheese person, it work just as well and turns out just as delicious! Give it a try if that takes your fancy!

Getting it nice and crispy

One of the main aspects of this recipe to get right is to make sure you have that surface layer of goat’s cheese nice and crispy. Make sure to keep an eye out for this throughout the bake, as whilst I do love crunchy cheese, you don’t want burnt cheese…or maybe you do?🧐

To Salt Or Not To Salt…

When it comes to salting the vegetables, I personally believe it is a little unnecessary considering that cheese has been added to the recipe, I believe it is already salty enough so I personally do not think it needs it. The cheese already give the dish a lovely a salty taste, however, if you feel that it requires a pinch of salt I recommend no more than 1 teaspoon/ 1 light sprinkle over the vegetables and thoroughly mix it in before adding the Goat’s cheese on top.
