Gluten Free Vegan Brownies That Will Blow Your Mind.
Intro
Brownies are a particular favourite of mine. However, gluten free – and especially gluten free and vegan brownies – are a hard combination to find together in the wild. So I thought, rather than being sad that no bakery that I live close to wants to make me gluten free and vegan brownies, instead I decided to bake my own. And I have to say, this gluten free and vegan brownie recipe is out of this world phenomenal!
Sometimes with brownies, they can be overly sweet to the point that they can give me a sugar rush headache. And so, I have created a gluten free vegan brownie recipe that will help to cut through that sweetness whilst still maintaining the fudgy, rich, chocolatey goodness of a brownie.
The secret ingredient that cuts through the sweetness – macadamia nuts!
However, as I macadamia nuts are added to the recipe this means that this recipe does contain nuts.

Gluten Free Vegan Brownies That Will Blow Your Mind
Equipment
- Electric Whisk (optional, but can help prevent sore muscles)
- Baking Dish
Ingredients
Brownie Ingredients
- 190 g Flour
- 150 g Coconut Oil Coconut oil should be firm, not liquid
- 200 g Brown Sugar
- 150 ml Vegan Milk I used almond milk
- 60 g Cocoa Powder
- 1 tsp Baking Powder
- 1 tsp Vanilla Extract
- 150 g Macadamia Nuts
- 140 g Gluten Free Vegan Chocolate
Toppings (Optional)
- 75 g Macadamia Nuts
- 40 g Gluten Free Vegan Chocolate I chose milk chocolate, but feel free to use dark or white chocolate
Instructions
- Preheat oven to 180oC (160oC fan)
- Line a baking dish with parchment paper
- Mix together all of the dry ingredients (flour, brown sugar, cocoa powder, baking powder) – hold off from adding the chocolate and macadamia nuts until the end)
- Next, create a little divot in the centre of the now mixed dry ingredients, and then add the wet ingredients (coconut oil, vegan milk, and vanilla extract)
- Give everything a thorough mixing together, and then fold into the mixture the macadamia nuts and (chopped into chunks) gluten free vegan chocolate
- Put the mixture into the parchment-lined baking dish and then add the macadamia nuts and (chopped into chunks) gluten free vegan chocolate as toppings – the toppings are totally optional, but greatly appreciated
- Bake for 25-30 minutes
- Cool, and then cut into squares
- Then the best part…enjoy!😉❤️

Tips and Tricks
The use of an electric whisk – a powerful friend
Honestly, one of the greatest baking inventions of all time. I have made this recipe with and without an electric whisk, and I can definitely feel the difference in my arm the next day. However, if you need a good arm exercise, I won’t stop you from going the traditional route and hand mixing.❤️
Sieving the brown sugar
Sieving through the brown sugar, before adding it to the mixing bowl, can save you a lot of hassle. As I have spent much time in the past crushing the brown sugar clumps, all because I was too lazy to get out the sieve. Avoid my past mistakes!
The measurements – depend on the size of the baking dish that you use
The measurements that I have used should be fine for your baking dish, however if you are using a particularly small, or large baking dish, make sure to make the appropriate adjustments to the measurements of the recipe.
How long to cool the brownies before cutting them into squares
Usually it takes between 30 minutes to an hour to cool the brownies when cooling on a wire rack. Cooling on a wire rack saves time by reducing the time it takes to cool the brownies, but it also prevents any soggy bottoms from forming.
Choosing the type of chocolate that suits you
As I alluded to earlier in the recipe, make sure to choose the type of chocolate that suits you. I have chosen a milk chocolate (still gluten free and vegan obviously), but if you are a white chocolate or dark chocolate lover, I will not get in the way of you and your true love!❤️
Coconut Oil – make sure it is firm and not liquid
As this is both a gluten free and vegan recipe, it is important to use firm coconut oil to maintain the structure of the brownie. When not using coconut oil in its solid form, then you are more likely to end up with a crumbly brownie that lacks structure. Additionally, this is why the cooling process is so important for this recipe. Especially in vegan baking, structure can sometimes be a problem, so the cooling process will help to solidify the brownie, create that nice fudgy texture, and prevent it from crumbling into a million pieces when you pick it up.
