How To Make A Gluten-Free Vegan Healthy Frozen Smoothie Bowl.

Intro

I am a lover of cheesecakes, and this recipe was my attempt to create a healthier version. Instead of having the delicious but unhealthy creamy centre of a cheesecake, I replaced it with a frozen smoothie. I think it’s a really nice way to enjoy a cool and refreshing treat while still having a sweet and creamy dessert.

As you can see from the image above, I decided to use a combination of a banana smoothie and a blueberry smoothie (both recipes are linked below). However, for the actual recipe, for simplicity’s sake, I decided to just list the blueberry smoothie recipe—just to let you know in case it was a bit confusing. I do think using the smoothies together creates a lovely blended aesthetic, so be sure to give it a try!

I haven’t added it as mandatory in the recipe, but I decided to top the frozen smoothie bowl with a biscuit base, fresh banana slices, and fresh blueberries. However, all of these extra little toppings are up to you and whatever you fancy!

This frozen smoothie bowl sits on a no-bake biscuit base, mimicking the indulgence of cheesecake – but much healthier. Packed with fruit and wholesome ingredients, it’s a refreshing, nutrient-rich twist on dessert that’s perfect for breakfast or a midday treat.

Ingredients
  

  • 4 Custard Creams (gluten free & vegan version)
  • 125 ml Coconut Water
  • 100 g Alpro Vanilla Yoghurt or any other vegan yoghurt alternative
  • 110 g Frozen Blueberries
  • 1 Banana

Instructions
 

  • Crush the custard creams and add them to the bottom of the freezer-friendly dish
  • Next add Coconut Water, Vegan Vanilla Yoghurt, Frozen Blueberries and 1 Banana to a blender
  • Blend the ingredients and then add the smoothie to the biscuit-lined freezer-friendly dish
  • Freeze for 3 hours
  • Serve and enjoy!

Tips and Tricks

Deciding On How Long To Freeze The Frozen Smoothie Bowl

I have given the guide of 3 hours to freeze the frozen smoothie bowl with a biscuit base, as that is what worked for my freezer. However, depending on the power of your freezer and also the size of the freezer-friendly dish (whether you decide to make a big portion or individual single servings—I recommend the single-serving containers for best results), it may take longer or shorter.

How To Know When The Frozen Smoothie Bowl With A Biscuit Base Is Done

To tell whether the frozen smoothie bowl is finished or not, grab a fork and gently scratch the surface. If it is liquid, then freeze for longer. If it is creating a crisp sound but you can still put your fork through it—as long as it is hard—then it is ready (you want a slightly more done version of a slushy so it keeps its consistency, but not so far gone that it is a frozen block of ice). If it is a frozen block of ice, then I recommend defrosting for 5–10 minutes until you get the correct consistency.

If deciding to prepare the day before and freeze overnight/for 24 hours, to avoid serving a frozen block of ice, make sure to defrost for approximately 5–10 minutes.

Deciding On The Flavour Of Your Frozen Smoothie Bowl With A Biscuit Base

For this recipe I decided to use a blueberry smoothie (in the picture I mixed a blueberry and banana smoothie to get the cool colour combination), however, if a blueberry smoothie is not what you fancy that day then I have a vast array of smoothie recipes to choose from which you can choose instead. Consistency and Taste

You must always make a smoothie that has a thick consistency (and must contain yoghurt) so that it creates a creamy dessert as opposed to an ice lolly with biscuit as the base.

Measurements

Remember measurements of the ingredients may need to change depending on the size of the freezer-friendly dish(es).

Choosing the Correct Biscuit Base for You

You can decide whether you want a chocolate base—such as cookies and cream or Bourbon biscuits—instead of a custard cream (all options should be gluten-free and vegan, of course). However, if you choose a biscuit base alternative to custard creams or the ones listed above, make sure the biscuit has a creamy centre, like a custard cream. That creamy centre is essential, as it helps bind the biscuit base together.

To Flip Or Not To Flip The Dessert?

I decided to flip the dessert in the image above mainly to demonstrate to audiences what it will look like. However, that can often lead to a bit of a mess, frankly, so I would recommend leaving the frozen smoothie bowl in its dish when deciding to eat.
