How To Make Gluten-Free Easy No-Bake Rocky Road.
Intro
I love rocky road. It is a simple, no-fuss, no-bake that is ideal to make as a dessert. So it is no surprise, that for this week’s post, I am sharing my How To Make Gluten-Free Easy No-Bake Rocky Road recipe.
Simply, smash up some biscuits and add some marshmallows, cover the mixture in chocolate and let the whole thing set. Voila, rocky road!!!
If you are the sort of person who hates decorating desserts, then this is a bonus for you. The contrast between the chocolate biscuits and the marshmallows is eye-catching enough and does not need any decoration.
In the hot weather as well, rocky road is a great dessert to make. After all, who doesn’t love a no-bake dessert in the heat? I microwaved all of the chocolate in about 30 seconds to fully melt it. Because of how little time that takes, it is a dessert that is perfect to make in the summer. (Saying that though, rocky road is rocky road. It is delicious therefore it is a great dessert to make all year round.)
In terms of servings, this recipe makes around 9 portions. Of course, you can make smaller (or bigger) portions according to your own preference. You can also double up the ingredients say if you want to make more servings.

Note: this rocky road recipe is vegan, as I use vegan biscuits and marshmallows. If you use ordinary biscuits and marshmallows, the recipe won’t be vegan!!!

How To Make Gluten-Free Easy No-Bake Rocky Road
Equipment
- 1 dish
- 1 freezer bag
- 1 microwave
- 1 microwave-safe bowl
- 1 Mixing Bowl
- 1 Rolling Pin
- 1 sheet of greaseproof paper
- 1 spoon
- 1 weighing scale
Ingredients
- 155 g of gluten-free biscuits
- 210 g of gluten-free chocolate
- 105 g of gluten-free, vegan marshmallows
Instructions
- Weigh the correct quantity of biscuits.
- Seal the biscuits inside the sandwich paper. Smash the biscuits into pieces using the rolling pans.
- Pour the biscuit pieces into the bowl.
- Weigh the correct of quantity of marshmallows.
- Then pour the marshmallows into the bowl. Make sure that they are mixed thoroughly with the biscuit pieces.
- Weigh the correct quantity of chocolate.
- Melt the chocolate in a microwave safe bowl.
- Pour the melted chocolate in the bowl. Mix to ensure that all of the biscuit pieces and marshmallows are covered.
- Using a spoon, transfer the mixture into a greaseproof paper-lined dish. Smooth out the mixture as much as you can.
- Place the mixture in the fridge for about 2 hours to allow the rocky road to harden.
- Take the rocky road out of the fridge, and cut into slices.
- Enjoy!

Tips and Tricks
- I use mini marshmallows to make rocky road. However, if you prefer to use large marshmallows, then feel free to do so.
- Some rocky road recipes have raisins in them. If you are a raisins fan, then add them to the rocky road! Personally, I am not the biggest fan of raisins, so that’s why I have not included them in this recipe. Each to their own though.
- Feel free to use any brand of chocolate that you want to use for this recipe. If you want to use white chocolate, for example, then it is really up to you.
- As I often say, it is your choice whether to add toppings. Rocky road is quite decadent, but if there is a particular topping that you like to add then go for it.
- If you want to add a little something to make the rocky road more delicious, then feel free to serve it up with a side of custard or ice cream. - As this is a quite a rich dessert, I like to use plain biscuits in this recipe. However, it is completely okay to use any type of biscuits you like. As long as they can be smashed up into delicious biscuit pieces, then you are good to go!!!
- I smashed up the biscuits using a rolling pin. However, if you have another method, that’s all good and fine too. As long as you have biscuit pieces to use, that’s all you need on the biscuit front.
- Cut up the rocky road into whatever size portions you want. I like to cut my rocky road into about 9 portions, but let the size of your portions be up to your own discretion.

Storage
The rocky road can be stored for approximately 5 days when left out at room temperature and stored in an air-tight container. If you store them in a fridge, they can potentially last around a week.
Additionally, this is just guidance. So, if it looks a bit dodgy, you don’t like the look of it or if it has been out for a while, then unfortunately, I think that is one for the bin. When it comes to cooking and baking a bit of common sense will go a long way. It is always better to be safe than sorry. Additionally, when storing always use an air-tight container, otherwise these times do not apply.
