How To Make Great Gluten Free Vegan Roast Potatoes.

Intro
As Christmas is coming up, it is a perfect time to start getting those Christmas Dinner Recipes saved now. I love Christmas Dinner, honestly my favourite meal of the year. It is the best, not only because of the great company (friends and family) and the festive ambiance, but it is also great because of the food. I love every part of a Christmas Dinner from the glazed parsnips to the Brussel sprouts. However, an absolute Christmas Dinner favourite of mine is the roast potatoes. They are absolutely gorgeous and a real treat. I have been perfecting my roast potato recipe for years now, so hopefully you will try, and enjoy, these gluten free vegan roast potatoes that everyone in the family can eat!
Another thing that is great about this roast potato recipe is that it can be used all year round for your Sunday roast. Let’s be honest though, we’ve all had a roast on a random day of the week just because we fancy it. It is too good to only have once a week! Sometimes, it is just too irresistible.

How To Make Great Gluten Free Vegan Roast Potatoes
Ingredients
- 1.5 kg Maris Pipers Potatoes
- 1 tsp Black pepper
- 4 tbsp Olive oil
- 3 tbsp Rosemary (dried) or fresh
Instructions
- Preheat the oven to 220oC (200oC fan)
- Wash and peel the potatoes and cut them into approximately 4-5cm by 4-5cm chunks
- Next parboil the potato chunks for approximately 20 minutes on a medium to high heat
- Whilst the potatoes are parboiling, line the oven dish with 2 tbsp of olive oil
- Once the potatoes are parboiled, place them in the oven dish and cover them with black pepper, rosemary and 2 tbsp of olive oil
- Cover the oven dish filled with potatoes in tin foil and then cook for 1 hour
- After an hour, take the tin foil off and cook for another 30 minutes
- Serve and enjoy!

Tips and Tricks
Size of the potato chunks
The size of the potato chunks are completely up to you, I just gave a size guide as I think some people appreciate a little bit of extra guidance from a recipe, whilst others prefer to go with the flow and adapt the recipe how they see fit. So however you want to play it is totally up to you. I am always here if you want that little bit of extra guidance and support. But if you want to make this recipe your own and be completely free with it, I 100% support you every step of the way as well!
Parboiling the potatoes for 20 minutes, too long or too little?
Personally, I love a fluffy centre in my potato, a crunchy exterior and a fluffy centre is a great roast potato in my book. If you want that fluffy centre effect make sure to boil for at least 20 minutes, maybe even more like 25-30 minutes (this only applies if you are using cold water and then put it on the hob). But if you don’t like the fluffy exterior then I personally would stick to the 20 minute parboil as you don’t want the potato to be too hard in the centre (again these times only apply if you start from cold water when you parboil).

Use cold water when parboiling the potatoes – don’t start off with hot water from the kettle!
If you use hot water from the kettle, the outside of the potato will immediately start to cook, but the centre will take time. However, as there is a nice and fluffy exterior more quickly, there is an increased risk of taking the potatoes off the hob too quickly, resulting in a hard interior. Additionally, there is an increased risk for a less structurally sound potato as the fluffy exterior will break apart due to it parboiling too long to ensure a well cooked interior. Bottom line, fill your boiling pot with cold water originally, and then watch as the potatoes cook evenly once the hob is turned on!
So whatever you do start with cold water when you first put it on the hob and let it warm up gradually! I know it will take longer, but your taste buds will thank you in the long run!
At the 1 hour cook time, turn over the roast potatoes
Once the potatoes have been cooking in the oven for 1 hour, make sure to turn all of the potatoes, this ensures a nice and crispy surface on all sides of the potato. A win-win for everyone!

To Salt Or Not To Salt…
When it comes to salting the gluten free vegan roast potatoes, I personally believe a little will go along way. Whilst I think it is nice to add that little sprinkle, I wouldn’t add anymore than that. I don’t personally believe it is necessary to use salt in this dish, however to each to their own.
