The Best Easy Dinner: Gluten Free Bangers & Mash

Intro
Bangers and Mash – a British classic! When I think of comfort food bangers and mash easily has to be in my top 10. Just thinking about coming home from a long day, walking home in the cold and rain and then walking through the door to the smell of succulent and juicy sausages – it turns a less than fantastic day into the best day ever!
So, the recipe that I am sharing with you this week is bangers and mash, if you haven’t guessed already. One thing that I will note about my bangers and mash recipe is that I make my mashed potatoes a bit differently from others. I make roast potatoes and then smash them down with all my pent up anger for the week to then make nice and smooth mashed potatoes. However, I do recognise that this method, whilst very very delicious, does take a bit longer. So, if you want to make mashed potatoes via the good old standard way – I will not be offended – just happy that you are eating a nice hot meal!
* By the way the standard way to make mashed potatoes is to boil the potatoes, add milk slowly and then mash the potatoes into a nice and smooth consistency.

The Best Easy Dinner: Gluten Free Bangers & Mash
Ingredients
- 1.5 kg Maris Pipers Potatoes
- 1 tsp of black pepper
- 4 tbsp of olive oil
- 3 tbsp of rosemary
- 12 gluten free sausages
Instructions
- Preheat the oven to 220oC (200oC fan)
- Wash and peel the potatoes and cut them into approximately 4-5cm by 4-5cm chunks
- Next parboil the potato chunks for approximately 20 minutes on a medium to high heat
- Whilst the potatoes are parboiling, line the oven dish with 2 tbsp of olive oil
- Once the potatoes are parboiled, place them in the oven dish and cover them with black pepper, rosemary and 2 tbsp of olive oil
- Cover the oven dish filled with potatoes in tin foil and then cook for 1 hour
- After one hour, remove the foil and continue cooking the potatoes for 30 minutes. Reduce the oven temperature to 190°C (Fan 170°C), then place the sausages in the oven and bake for 20–25 minutes, or until golden brown. Remove both the sausages and potatoes once the sausages are fully cooked.
- With a masher, mash down the roast potatoes until a nice and smooth consistency is reached.
- Plate the mash potatoes and sausages together and enjoy!

Tips and Tricks
The way that I make mashed potatoes is I make roast potatoes and then I mash them. I think that they taste great and better than normal mashed potatoes. However, I know that this method takes a long time. So if you are in a bit of a pinch then just boil the potatoes fully and slowly add in milk to the mash until it is a nice and smooth consistency.
I think black pepper and rosemary are a great combination. However, some other spices to add could include parsley, sage, thyme, and white pepper.
The right gravy can make or break a dish. I think that this works particularly well with a veggie gravy. However, if you long for that beef or chicken gravy then you know I won’t stand in your way. Just make sure not to make your gravy too salty as sausages are already naturally quite salty as it is so yu don’t want to overpower the dish (hence why I didn’t add salt to the potatoes).

To Salt Or Not To Salt…
When it comes to salting the The Best Easy Dinner: Gluten Free Bangers & Mash, I personally believe it is a little unnecessary due the gravy being added to this recipe. However, if you can’t live without that little sprinkle of salt on top of your bangers and mash, you can add a tiny amount. Remember that a little will go along way. You can always add more salt but can’t take it away once it is on. Salt wisely, and happy eating!😉❤️
