Ingredients
  

  • 1.5 kg Maris Pipers Potatoes
  • 1 tsp of black pepper
  • 4 tbsp of olive oil
  • 3 tbsp of rosemary
  • 12 gluten free sausages

Instructions
 

  • Preheat the oven to 220oC (200oC fan)
  • Wash and peel the potatoes and cut them into approximately 4-5cm by 4-5cm chunks
  • Next parboil the potato chunks for approximately 20 minutes on a medium to high heat
  • Whilst the potatoes are parboiling, line the oven dish with 2 tbsp of olive oil
  • Once the potatoes are parboiled, place them in the oven dish and cover them with black pepper, rosemary and 2 tbsp of olive oil
  • Cover the oven dish filled with potatoes in tin foil and then cook for 1 hour
  • After one hour, remove the foil and continue cooking the potatoes for 30 minutes. Reduce the oven temperature to 190°C (Fan 170°C), then place the sausages in the oven and bake for 20–25 minutes, or until golden brown. Remove both the sausages and potatoes once the sausages are fully cooked.
  • With a masher, mash down the roast potatoes until a nice and smooth consistency is reached.
  • Plate the mash potatoes and sausages together and enjoy!
