Total Time 1 hour hr 55 minutes mins
- 1.5 kg Maris Pipers Potatoes
- 1 tsp of black pepper
- 4 tbsp of olive oil
- 3 tbsp of rosemary
- 12 gluten free sausages
Preheat the oven to 220oC (200oC fan)
Wash and peel the potatoes and cut them into approximately 4-5cm by 4-5cm chunks
Next parboil the potato chunks for approximately 20 minutes on a medium to high heat
Whilst the potatoes are parboiling, line the oven dish with 2 tbsp of olive oil
Once the potatoes are parboiled, place them in the oven dish and cover them with black pepper, rosemary and 2 tbsp of olive oil
Cover the oven dish filled with potatoes in tin foil and then cook for 1 hour
After one hour, remove the foil and continue cooking the potatoes for 30 minutes. Reduce the oven temperature to 190°C (Fan 170°C), then place the sausages in the oven and bake for 20–25 minutes, or until golden brown. Remove both the sausages and potatoes once the sausages are fully cooked.
With a masher, mash down the roast potatoes until a nice and smooth consistency is reached.
Plate the mash potatoes and sausages together and enjoy!
