The Best Gluten Free Vegan Cookie Dough Bars.

Intro
I love biscuits, or cookies as some like to call them, but I can’t help but absolutely love cookie dough more. So, when creating this recipe I was thinking about a way to make a great cookie dough recipe whilst still making it gluten free and vegan. And thus, this delicious recipe was born.
Gluten free vegan cookie dough bars are great treat to have with family and friends. Especially great around the holidays – they are something that everything will love. Plus, no-one will have any clue that they are gluten free, and vegan!

The Best Gluten Free Vegan Cookie Dough Bars
Ingredients
- 250 g Gluten Free Flour
- 130 g Coconut Oil
- 200 g Light Brown Sugar
- 125 ml Vegan Milk (I used almond milk in this recipe)
- 1 tsp Baking Powder (must use baking powder and not baking soda/ bicarbonate soda)
- 1 tsp Vanilla Extract
- 140 g Gluten Free Vegan Dark Chocolate
Instructions
- Preheat oven to 180oC (160oC fan)
- Line a baking dish with parchment paper
- Mix together all of the dry ingredients (flour, brown sugar, baking powder)
- Next, create a little divot in the centre of the now mixed dry ingredients, and then add the wet ingredients (coconut oil, vegan milk, and vanilla extract)
- Give everything a thorough mixing together, and then fold into the mixture half the (chopped into chunks) gluten free vegan chocolate
- With the other half of the (chopped into chunks) gluten free vegan chocolate, scatter them on the bottom of the parchment lined baking dish until the entire baking dish is completely covered in chocolate (do not be afraid to add more chocolate if there isn't enough)
- Pour the mixture into the parchment-lined baking dish
- Bake for 30-35 minutes
- Cool, and then cut into squares
- Then the best part…enjoy!😉❤️

Tips and Tricks
The coconut oil is the base of this dish that provides that cookie dough, almost fudgy texture. It is necessary to have the coconut oil in its solid form, not its liquid form, to make the beautiful batter that will then blossom and become these delicious gluten free vegan cookie dough bars.
If you want nice and clean lines for your cookie dough bars, you must make sure to wait until they are, at least, room temperature so that you can have nice clean lines and perfect rectangles for your cookie dough bars. If you give into the temptation and cut them right after coming out of the oven, that will result in a bit of a mess, and no even cookie dough bars for you.
After you have allowed the cookie dough bars to cool to room temperature, if you want, you can stick them in the fridge and allow them to properly set to have delicious cookie dough bars in the end that are nice and firm. If you don’t put them in the fridge, they will still taste great, but they won’t have as much structural integrity. However, I know that is a lot to ask, as once some delicious treat is baked and out of the oven, at least for me, all I want to do is eat it!

To Salt Or Not To Salt…
When it comes to salting the The Best Gluten Free Vegan Cookie Dough Bars, I personally believe it is a little unnecessary. However, I know a lot of people love that sweet and salty combo, and so if you are one of those people that can’t live without that little sprinkle of salt, I won’t stand in your way. If you do add salt, make sure to only add a sprinkle on top of the cookie dough bars before they go in the oven. Remember that a little will go along way.
When it comes to salting recipes, from dinners to desserts, you must remember the golden rule – you can always add more salt but can’t take it away once it is on. Salt wisely, and happy eating!😉❤️
