Pre-heat the oven at fan 200oC (220oC for oven) Wash and dry the sweet potatoes and remove any bruised skin
With a fork, pierce the sweet potatoes and then bake the sweet potatoes in the oven for 1 hour at 200oC (fan)
Whilst the sweet potatoes are baking, wash the bell peppers and cut the bell peppers top heavy so that the bell peppers are like a bowl. Make sure to keep the top and carve out the insides and seeds of the bell peppers.
Grate the parmesan cheese
In a bowl, gently mix 1tbsp of black pepper, 1 tbsp of Thyme, 1 tbsp of rosemary and the grated parmesan cheese
Once the sweet potatoes are done baking, take them out of the oven and mash the sweet potatoes with a masher (make the skin part of the mash for a bit of texture!)
At the bottom of the bell pepper bowls place some of the cheese-spice mixture (only a small amount)
Then stuff the bell peppers with all the sweet potato mash
In the bell pepper bowls stuffed with sweet potato add the cheese mixture on top
Place the stuffed bell peppers in an oven dish and then bake them for 25 minutes at fan 200oC (or until the parmesan is nice and golden brown)
Then take them out of the oven and enjoy!
