Best Gluten Free Cheesy Sweet Potato Stuffed Bell Peppers

Ingredients
  

  • 2 Sweet Potatoes
  • 3 Bell Peppers
  • 80 g Parmesan Cheese
  • 1 tbsp Black Pepper
  • 1 tbsp Rosemary
  • 1 tbsp Thyme

Instructions
 

  • Pre-heat the oven at fan 200oC (220oC for oven)
  • Wash and dry the sweet potatoes and remove any bruised skin
  • With a fork, pierce the sweet potatoes and then bake the sweet potatoes in the oven for 1 hour at 200oC (fan)
  • Whilst the sweet potatoes are baking, wash the bell peppers and cut the bell peppers top heavy so that the bell peppers are like a bowl. Make sure to keep the top and carve out the insides and seeds of the bell peppers.
  • Grate the parmesan cheese
  • In a bowl, gently mix 1tbsp of black pepper, 1 tbsp of Thyme, 1 tbsp of rosemary and the grated parmesan cheese
  • Once the sweet potatoes are done baking, take them out of the oven and mash the sweet potatoes with a masher (make the skin part of the mash for a bit of texture!)
  • At the bottom of the bell pepper bowls place some of the cheese-spice mixture (only a small amount)
  • Then stuff the bell peppers with all the sweet potato mash
  • In the bell pepper bowls stuffed with sweet potato add the cheese mixture on top
  • Place the stuffed bell peppers in an oven dish and then bake them for 25 minutes at fan 200oC (or until the parmesan is nice and golden brown)
  • Then take them out of the oven and enjoy!
