Preheat the oven at 200oC fan (for oven 220oC)
Wash and dry the new potatoes and peel off anything unsavoury on them and then boil the new potatoes on the hob on a medium heat for approximately 20-30 minutes or until the potatoes are nice and fluffy inside.
Whilst that is boiling, grate the parmesan cheese
Once the new potatoes are boiled, drain the water from the potatoes and place them in an ovenproof dish
Weigh out 50g of butter and place that in the microwave for approximately 30 seconds or until it becomes liquid. Then add 1 tbsp of parsley to the butter and give the butter parsley mixture a good stir
Pour the parsley butter mixtures over the new potatoes in the oven proof dish making sure that all of the potatoes are thoroughly coated
Next, poor the grated parmesan cheese on top of the new potatoes and once again gently mix them with the potatoes, parsley and butter to ensure even distribution
Place the cheesy new potatoes in the oven for approximately 30 minutes or until the cheese in nice and golden brown
Plate up and enjoy!
