Gluten Free Cheesy Parsley & Parmesan New Potatoes

Ingredients
  

  • 1 kg New Potatoes
  • 50 g Butter
  • 1 tbsp Parsley
  • 100 g Parmesan Cheese

Instructions
 

  • Preheat the oven at 200oC fan (for oven 220oC)
  • Wash and dry the new potatoes and peel off anything unsavoury on them and then boil the new potatoes on the hob on a medium heat for approximately 20-30 minutes or until the potatoes are nice and fluffy inside.
  • Whilst that is boiling, grate the parmesan cheese
  • Once the new potatoes are boiled, drain the water from the potatoes and place them in an ovenproof dish
  • Weigh out 50g of butter and place that in the microwave for approximately 30 seconds or until it becomes liquid. Then add 1 tbsp of parsley to the butter and give the butter parsley mixture a good stir
  • Pour the parsley butter mixtures over the new potatoes in the oven proof dish making sure that all of the potatoes are thoroughly coated
  • Next, poor the grated parmesan cheese on top of the new potatoes and once again gently mix them with the potatoes, parsley and butter to ensure even distribution
  • Place the cheesy new potatoes in the oven for approximately 30 minutes or until the cheese in nice and golden brown
  • Plate up and enjoy!
