The Best Triple Cheese Gluten Free Cauliflower Cheese.

Intro

Cauliflower cheese is not a recipe that you would think would be that difficult. However, it does have a few particularities that you must be strict with if you want to make it fantastically. It is a great dish, even with its particularities in preparation. It has both cheese and vegetables, which not only makes it tasty, but in my book healthy as well!

Cauliflower cheese is traditionally made with a Béchamel sauce in which you slowly add cheese to it to give the cauliflower cheese that rich and creamy goodness. However, my recipe is a bit alternative to that and I think even more yummy than the traditional. But, if you ever want a traditional gluten free cauliflower cheese recipe that also has the Bechamel sauce, please let me know and I will publish the recipe immediately. Your wish is my command.

Cauliflower cheese, whilst an amazing dish that is often served around Christmas time along with that beautiful turkey, can also be enjoyed all throughout the year. It can be a dinner by itself or a side dish for a Sunday Roast or another main dish. It is truly versatile!

The Best Triple Cheese Gluten Free Cauliflower Cheese

Gluten Free VIPs
Golden, bubbling, and irresistibly creamy — the best cauliflower cheese marries tender florets with a rich, velvety sauce, crowned by a crisp, golden crust. Comfort food perfected in every bite.

Cook Time 30 minutes
Total Time 40 minutes
Course Dinner, Side Dish
Servings 8

Ingredients
  

  • 250 ml Almond Milk
  • 175 g Cheddar Cheese
  • 175 g Parmesan Cheese
  • 500 g Ricotta Cheese
  • 1 head of Broccoli
  • 1 head of Cauliflower
  • 2 tbsp Thyme
  • 2 tbsp Rosemary
  • 1 tsp Black Pepper

Instructions
 

  • Preheat the oven to 190oC (170oC fan)
  • Wash and cut up the broccoli and cauliflower heads into smaller pieces (cut from the stem)
  • Grate the cheddar and parmesan cheese and place the grated cheese in a bowl to the side
  • Next, on a medium to high heat parboil the cauliflower and broccoli pieces for 3-5 minutes
  • Drain the water and put the cauliflower and broccoli to the side
  • In a separate bowl mix together the almond milk (or cow's milk if you prefer) and ricotta.
  • Then, slowly add in the cheddar cheese until a nice smooth consistency is reached (don't worry that the cheddar isn't melted that is what the oven is for 😉)
  • Once the mixture is a smooth consistency, add in the broccoli and cauliflower to the mix and coat well. Once coated, move the mixture to an oven dish.
  • Add the parmesan cheese, rosemary, thyme and black pepper on top of the cauliflower cheese
  • Cook for 25-30 minutes (or until the top is golden brown)
  • Serve and enjoy!

Tips and Tricks

Parboil the broccoli and cauliflower for only 3-5 minutes!

YOU MUST ONLY PARBOIL THE CAULIFLOWER AND BROCCOLI FOR 3-5 MINUTES!!! The reason behind this is if you don’t then this will result in all of the water leaking out of the cauliflower and the broccoli when you cook the cauliflower cheese in the oven. Therefore, rather than a beautiful creamy cauliflower cheese, you will have a watery lake filled with cauliflower and broccoli.

Choosing the strength of your cheddar cheese

I specifically did not add in the ingredients list the strength of the cheddar cheese as that is completely up to you! If you prefer a creamy cheddar cheese then I would recommend going for strength 1-2, however if you prefer a stronger taste and flavour then strength 5-6 is the way to go for you. If you are an in the middle person, or simply can’t make up your mind, have the best of both worlds and choose strength 3. But like I always say, the choice is up to you and your taste buds!

Deciding to add broccoli to the cauliflower cheese

I decided to add broccoli to this cauliflower cheese recipe for two reasons and two reasons only. I love broccoli, and because I love the colour contrast it creates when you have both cauliflower and broccoli together. However, if you want to go the traditional cauliflower only cauliflower cheese route, then substitute the broccoli head with a cauliflower head instead!

To Salt Or Not To Salt…

When it comes to salting the The Best Triple Cheese Gluten Free Cauliflower Cheese, I personally believe it is a little unnecessary due to all of the cheese being added to this recipe. However, if you can’t live without that little sprinkle of salt on top of your cauliflower cheese, you can add a tiny amount. Remember that a little will go along way. You can always add more salt but can’t take it away once it is on. Salt wisely, and happy eating!😉❤️
