Tips and Tricks

Leave the butter out of the fridge for at least 30 minutes before you start making the crumble.

I recommend keeping the butter in the fridge when you first bring it home, unless you plan to make the crumble straight away. Cold butter helps you form crumbly pieces that won’t melt in your hands, but you also don’t want it rock‑hard. Let it sit out for about 30 minutes so it reaches that cool, just‑above‑room‑temperature stage where it’s easy to break into small clumps.

If you feel that your crumble topping mixture is too melted, pop it back in the fridge!

What I like to do is make the crumble topping first, then stick that in the fridge once it has all been made up. This allows it time to cool in the fridge into those nice clumps (and prevents melted butter forming whilst you pre-heat your oven). Whilst the crumble topping is in the fridge not melting, then you can work on the blueberry mixture.

An extra 5 minutes can be just what you need!

35 minutes is a perfect amount of time to make a golden brown crumble topping, however sometimes I think that cheeky extra 5 minutes can create that beautiful crunch that a crumble needs!

Two trays – my trick of the trade!

My trick of the trade, and long held secret for how to make the most luscious crumble that is also beautiful to serve up is to make the crumble in two separate trays. Make one oven dish with your blueberry mixture and another with your crumble mixture. When it is time to serve, there is no mess. However, the down-side of this is that there is more washing up. So you have to decide, better presentation vs more washing up – that decision can only be made by you as to what is more important.
