Ninja Creami Ice Cream Maker Gluten Free Vegan Rocky Road Ice Cream

Upside of Ninja Creami Ice Cream Maker for those with Dietary Restrictions
Homemade Ice Cream has never been easier, when using the Ninja Creami ice cream maker. There are so many different ice cream flavours that it can be used to make. It can make oreo/ cookies and cream ice cream to simple, but not to be underestimated, vanilla ice cream. It can also make milkshakes, sorbets and gelatos. Sometimes I feel like I am running a gelato shop. It is very nice to be able to make a pint of ice cream whenever I want to. What I like about having the Ninja Creami is that I can fully customise my ice cream recipes! As someone who is gluten free, I love that I can control the ingredients for what I put in it. But beyond gluten intolerances and coeliacs, I believe that the Ninja Creami is great for everyone with dietary restrictions. It can be great for those with nut allergies to individuals with diabetes controlling sugar levels. It is lovely that no-one has to miss out on the fun with a cheeky pint of ice cream.
Downside of Ninja Creami Ice Cream Maker for Gluten Free & Vegan Individuals
However, whilst I love the Ninja Creami, there are some downsides. The first one is not anything to do with taste, but sound. It is extremely loud. I cannot hear what I say, let alone what anyone near me has to say when it is on. Nevertheless, whilst it does have this one issue it doesn’t take too long to make the ice cream. Furthermore, I do understand that when you are shredding a block of ice, it may come with a bit of noise.
Another downside mainly comes with vegan ice cream making. If you are just a coelic/ individual with gluten intolerance and like dairy products, then you can use dairy based products which can easily create the creamy texture of ice cream that is sought after. On the other hand, if you are a vegan and gluten free ice cream maker, then we have our work cut out for us – but don’t worry there are solutions!
Often times when making vegan ice cream with the Ninja creami, it can come out very powdery as the ice cream often crystalises due to a too high water content. Not only is this not that pleasant to eat (like eating freshly fallen snow), but it makes it impossible to store the ice cream for another time.
Solution
But do not fear, I have solutions to this powdery ice cream problem. In a previous blog recipe post I gave one solution where I added in vegan vanilla yoghurt to the ice cream to add moisture (you can read that article here – How To Make Gluten-Free and Vegan Ninja Creami Ice Cream, if you like the sound of that!). In this recipe, I will provide a different solution – marshmallows!😉 I am going to use innovative solution to make one of the best ice cream flavours of all time… Rocky Road Ice cream.
Rocky Road ice cream is an amazing ice cream, a combination of decadent chocolate ice cream, digestive biscuits, marshmallows and, for some, raisins. I am personally not a raisin lover myself, so you won’t see me putting a raisin anywhere near this dessert, but like I always say, if you like it just add it, homemade recipes are customisable to you.

A Better Rocky Road: Vegan, Gluten‑Free, and Ninja Creami‑Ready
Equipment
- Ninja Creami Ice Cream Maker
Ingredients
Ice Cream
- 125 ml Coconut Cream (full‑fat, not coconut milk)
- 250 ml Almond Milk (or any other vegan milk alternative)
- 2 Bananas (chop into slices to make it easier for the Ninja Creami to mix)
- 3 tbsp Pistachio Butter (alternatives include: cashew butter, peanut butter, almond butter)
- 3-5 Large Gluten Free Vegan Marshmallows (depending on how large the marshmallows are, and how much room you have left in the pint – no spill over)
- 2-3 tbsp Cocoa Powder (depends on how chocolatey you want it)
Mix-Ins
- 3 Gluten Free Vegan Digestive Biscuits (lightly crushed into pieces)
- 15 g Gluten Free Vegan Mini Marshmallows (You may want to add less of this, I just really love them)
Instructions
Prepping the Mix for Freezing
- Chop the 2 bananas into slices and add them to the Ninja Creami Pint
- Then add the pistachio butter, followed by the coconut cream and almond milk
- Next, add the cocoa powder and give the contents of the pint a quick mix to ensure the cocoa powder (& pistachio butter) is evenly distributed throughout
- Finally, add in the 3-5 large marshmallows (make sure to squeeze them in)
- Freeze overnight (24hrs)
Making the Ice Cream (the fun part😉)
- Take the pint of ice cream out of the freezer and leave out for 5-10 minutes (this will make it easier for the Ninja Creami to mix the ice cream)
- Assemble the Ninja Creami blade and turn on the Ninja Creami to the setting Lite Ice Cream (4 minutes)
- Then add in your mini-marshmallow and crushed digestive biscuit (gluten free and vegan for both, obviously) to the pint of ice cream and press the mix-in setting (2 minutes)
- Voila! Enjoy your gluten free vegan Rocky Road Ice Cream – the best bit!❤️😊

Prep Time: 5 minutes
Freeze Time: 24 hours (overnight)
Spin Time: 4 minutes (Lite Ice Cream)
Mix-Ins: 2 minutes (Mix-In)

Tips and Tricks
Marshmallows (non-mix in ones) are really important to prevent crystallisation and powdery ice cream in the recipe, so make sure to add in at least 3-5. The mix-in marshmallows, are not meant to be blended in – they serve as the marshmallows for the rocky road ice cream, and so you should be able to taste the marshmallows as they are (almost like a topping) to complete the rocky road ice cream.
Honestly, marshmallow sizing is completely dependent on which marshmallow brand you have bought. My large marshmallows may be much smaller than yours. Make sure to add in one at a time, and even cut them up at bit in order to squeeze them in as the non-mix-in ones are really important for the texture of this gluten-free vegan ice cream.
I really love pistachio butter, that is why I added it to the recipe. However, if you don’t like it (which I find hard to believe) or you don’t have it, don’t worry you can use another nut butter alternative like peanut butter, cashew butter or almond butter. Any of those would work!
